Kickstart Your Mornings All Week with a Delicious Breakfast Bake

Six years into this motherhood journey and I am finally trying to be more conscientious about how I fuel and nourish my body properly. After years of waking up, making the kiddos breakfast, getting them off to school and then maybe having a minute to myself for food or coffee, I am starting to shift the way I approach each day. Running off of little sleep and coffee on an empty stomach only works for so long before cortisol creeps up, your nervous system is dysregulated and you feel like your burning the candle at both ends.
So whether you're here because you want a new delicious recipe, are trying to eat more protein, or get into the habit of eating breakfast, look no further.
Makes 12 Servings
Macros: 133 Calories -- 12.7g Protein / 7.8g Carbs / 6.3g Fats
Ingredients:
1 package mild Italian chicken sausage, diced (I like Bilinski or Trader Joes)
1tsp. olive oil
8 large eggs
1/2 cup egg whites
1/2 cup onion
4 cloves garlic
1 cup diced sweet potatoes
1 bell pepper
3-4 cups chopped kale
1/2 cup shredded cheese
Set oven to 400 degrees while you chop your sausage and veggies. Throw sweet potatoes on a tray and spray them with olive oil or avocado oil and some seasoning (salt, pepper, garlic). Roast for 20 minutes, turning once. Turn oven down to 350.
While sweet potatoes are roasting, add oil to pan and start to sauté the onion. After about 5 minutes add the garlic, kale and bell peppers. Continue to sauté for 2-3 more minutes, or until kale is soft. I also like to sauté the sausage for texture, but if they are pre-cooked, you do no necessarily need to.

Grease a 9x13 baking pan. Add all vegetables and sausage to pan, Mix eggs and egg whites together in a bowl, and then pour over mixture. Sprinkle cheese over top and bake for 20-25 minutes. The bake should be a little golden brown on the top when it's cooked through.
Once cooled (a bit), slice into 12 pieces. Enjoy 2 pieces for a full breakfast, or one for a mid-day snack!
